If you’ve ever had authentic Texas BBQ, you know the taste is simply second to none. But Washington is a long way from the Lone Star State — and while we certainly have some tasty BBQ joints here, it’s tough to compare to Texas. That being said, Outlaw BBQ & Cater Market has managed to replicate the slow-smoked goodness quite well. And what’s even more impressive is the fact that it’s a Pacific Northwest native doing the cooking.

Outlaw BBQ is located on West Wellesley Avenue in Spokane, offering both catering services and family-friendly dining.

Kristopher Roy / Google Owner and BBQ master Ray Wilson grew up in the Pacific Northwest. But he’s been to Texas over a dozen times, and that’s where he found inspiration to create his own mouthwatering cuisine.

Outlaw BBQ isn’t the first venture for Wilson. He and some friends opened now-defunct Boulevard House of Music in 2004 and got a smoker.

Outlaw BBQ & Catering Market / Facebook Wilson then moved on to The Monterey Café in Spokane and Monterey Pub in Cheney before opening this eatery in 2017.

This place is casual, fun, welcoming, and full of Southern charm. The bar and most of the furniture were built by Wilson himself.

You’ll notice an instant difference in flavor and quality when you bite into the food here.

All meats are slow-smoked in-house, and they’re fantastic.

But as decadent as the BBQ is here, that’s not the only thing Outlaw does.

Outlaw BBQ is still offering a fantastic family-style takeout menu, but the dining room has also re-opened (with limited seating).
