Do you want to know a great rule of thumb for finding a delicious restaurant? The older and more worn the sign and exterior, the better chance you have of finding an establishment that has stood the test of time. One of these tried and true places that we cannot say enough good things about is Colorado’s own Pobre Pancho’s, which has been family-owned since the 1960s:
Located in Fort Collins, Pobre Pancho’s is a 50+ year tradition whose motto is “We serve food fast, but not fast food.”

Founded in 1969, Pobre Pancho’s was the brainchild of Frank and Mary Perez, who have stepped back in recent years (with their granddaughter currently managing the restaurant), but still assist in the restaurant’s day-to-day.
