If you love cheese, then you’re probably already familiar with the many incredible varieties of Beehive Cheese. You can get it at most Utah grocery stores, and it’s always delicious. One of its varieties won “Best Flavored Cheddar” in the 2007 American Cheese Society competition, and it’s been winning awards ever since!

You don’t need to visit the Beehive Cheese creamery to pick up some of your favorite variety, but it’s well worth a trip to see where this high-quality cheese is made.

Beehive Cheese got its start in 2005, when Tim Welch and his brother-in-law Pat Ford decided to break into the cheese business. At the time, neither of them knew anything about making cheese, but that wasn’t about to stop them!

The two entrepreneurs found a mentor in Western Dairy Center, and got to work learning everything they could about making artisanal cheese.

All the cheese made here is created in small batches. The cheese curds are cut by hand and packed into cheese wheels, then aged to perfection. Tim and Pat decided pretty quickly that they wanted to create some interesting flavor profiles.

Once they’d perfected their flagship flavor, Promontory, they started experimenting with unique flavors. Tim happened to have some fresh-ground coffee around, and they combined it with rosemary and rubbed it on the rind of the Promontory to create Barely Buzzed.

They took Barely Buzzed to the American Cheese Society competition, where it won first place as the “Best Flavored Cheddar In America!” That was in 2007, and Barely Buzzed went on to win first place the next four years in a row.

Barely Buzzed isn’t the only flavor to win acclaim for this little creamery. Other prize winners include Apple Walnut, Big John’s Cajun, Promontory, Full Moon, Tea Hive, and Sea Hive.
